Ge\u00e7ti\u011fimiz aylarda \u201cT\u00fcrkiye\u2019nin Lezzet K\u00f6\u015fesi\u201d patentini alan UNESCO\u2019nun gastronomide \u201cYarat\u0131c\u0131 \u015eehirler A\u011f\u0131\u201dnda olan Hatay\u2019\u0131n yemek k\u00fclt\u00fcr\u00fcn\u00fcn geli\u015fimine ve tan\u0131t\u0131m\u0131na katk\u0131 sa\u011flayacak olan akademide, bir\u00e7ok workshop ve e\u011fitimler ile yeni \u015feflerin yeti\u015ftirilmesi hedefleniyor.<\/strong><\/p>\n\n\n\n

Gazetecilere, proje ile ilgili bilgi veren Gastronomi Akademisi ba\u015f dan\u0131\u015fman\u0131 Dr. Esat \u00d6zata, \u201c Gastronomi akademisi \u00e7e\u015fitli workshoplar\u0131n yap\u0131laca\u011f\u0131 bir akademi. En \u00f6nemli \u00f6zelli\u011fi gastronominin t\u00fcm \u00f6\u011felerini, disiplinlerle entegre bir \u015fekilde sunmak olacak. Gastronomi akademisinde tar\u0131m\u0131, yemek tarihini, yemek antropolojisini, ileti\u015fimi ve ekonomiyi de konu\u015faca\u011f\u0131z. Burada T\u00fcrkiye\u2019nin \u00e7e\u015fitli illerinden gelecek olan de\u011ferli isimleri ve gastronomi camias\u0131ndan uzmanlar\u0131 a\u011f\u0131rlayaca\u011f\u0131z\u201d dedi. <\/strong><\/p>\n\n\n\n

S\u0131cak ve so\u011fuk mutfak at\u00f6lyelerinde e\u011fitimlerin verilece\u011fini belirten \u00d6zata, \u201cSushiden Hatay mutfa\u011f\u0131na, davet men\u00fclerinden et pi\u015firme y\u00f6ntemlerine ve d\u00fcnya mutfaklar\u0131na kadar da workshoplar yapaca\u011f\u0131z. Ekmek, pasta ve \u00e7ikolata \u00fczerine de dersler verece\u011fiz ve ayl\u0131k kurslar\u0131m\u0131z olacak. Di\u011fer \u015fehirler ile etkile\u015fim halinde olaca\u011f\u0131z ve entegre \u00e7al\u0131\u015fmalar yapaca\u011f\u0131z. Hatay\u2019daki restoran sahipleri ve i\u015fletmelerine hijyen e\u011fitiminden m\u00fc\u015fteri ili\u015fkileri sekt\u00f6r\u00fcne hizmet etmek istiyoruz. Sekt\u00f6r\u00fcm\u00fcze kaliteli ve donan\u0131ml\u0131 \u015fefler yeti\u015ftirmek en b\u00fcy\u00fck misyonlar\u0131m\u0131zdan biri\u201d diye konu\u015ftu. <\/strong><\/p>\n\n\n\n

SAVA\u015e: AKADEM\u0130 \u00c7OK GEN\u0130\u015e B\u0130R ALANDA H\u0130ZMET VERECEK  <\/strong><\/p>\n\n\n\n

Hatay\u2019\u0131n demografik olarak \u00e7ok \u00f6nemli bir co\u011frafyada yer ald\u0131\u011f\u0131n\u0131 ifade eden Ba\u015fkan Sava\u015f, \u201c Hatay y\u00fczy\u0131llard\u0131r tar\u0131m\u0131n merkezi olmu\u015f bir \u015fehir. Bu co\u011frafya tar\u0131m\u0131n yap\u0131ld\u0131\u011f\u0131, bu\u011fday\u0131n ve zeytinin ilk yeti\u015ftirildi\u011fi bir yer. Kuzey Afrika, Ortado\u011fu ve Kafkaslardan itibaren Anadolu\u2019nun tam birle\u015fkesinde \u00e7ok \u00f6nemli bir ticaret merkeziyiz. Y\u00fczy\u0131llarca bir\u00e7ok kavim, k\u00fclt\u00fcr ve medeniyet kendi yemek k\u00fclt\u00fcr\u00fcn\u00fc Hatay\u2019a getirmi\u015f. 600\u2019\u00fcn \u00fczerinde bir yemek \u00e7e\u015fidine sahibiz. Yemeklerimizi yaparak hem a\u015f\u00e7\u0131lar hem de garsonlar yeti\u015ftirmemiz gerekiyor. Gastronomi, ekonomi ve tar\u0131m i\u00e7 i\u00e7e girmi\u015f birle\u015fkeler. Biz hem tar\u0131m\u0131 kalk\u0131nd\u0131rmak istiyoruz hem de Hatay\u2019\u0131n yemeklerini tan\u0131t\u0131rken insanlar\u0131m\u0131za hijyen konusunda e\u011fitim vermek istiyoruz. Hatay\u2019\u0131n yemeklerini daha iyi ve kaliteli nas\u0131l yapabiliriz diye insanlar\u0131m\u0131za \u00f6\u011fretmeyi hedefliyoruz. Akademi \u00e7ok geni\u015f bir alanda hizmet verecek\u201d de\u011ferlendirmesinde bulundu. <\/strong><\/p>\n\n\n\n

Akademi sayesinde yemek k\u00fclt\u00fcr\u00fcn\u00fcn tan\u0131t\u0131m\u0131n\u0131n olaca\u011f\u0131n\u0131 da kaydeden Sava\u015f, \u201cBuras\u0131 Hatay ile birlikte d\u00fcnya mutfa\u011f\u0131 olacak. Burada sadece bizim Esat Hocam\u0131z de\u011fil d\u0131\u015far\u0131dan da bir\u00e7ok getirece\u011fimiz hocalar\u0131m\u0131z ve \u015feflerimiz olacak ve e\u011fitimler verecekler. Sadece Hatayl\u0131lara de\u011fil d\u00fcnyadan gelen bir\u00e7ok insana burada e\u011fitim verece\u011fiz. Burada m\u00fcesseselerimiz ve kurslar\u0131m\u0131z da olacak. G\u0131da ile u\u011fra\u015fan herkesin buradan faydalanmas\u0131n\u0131 sa\u011flayaca\u011f\u0131z\u201d dedi. <\/strong><\/p>\n\n\n\n

EXPO alanlar\u0131n\u0131n ilin b\u00fcy\u00fck bir gereksinimi oldu\u011funun ortaya \u00e7\u0131kt\u0131\u011f\u0131n\u0131 g\u00f6rd\u00fcklerini anlatan Sava\u015f,  \u201cBuras\u0131 ticaretten turizme, gastronomiden e\u011flenceye kadar bir\u00e7ok faaliyetin i\u00e7 i\u00e7e girdi\u011fi bir yer. B\u00fct\u00fcn ya\u015f gruplar\u0131 buraya gelerek zaman ge\u00e7iriyorlar. Buras\u0131 Hatay i\u00e7in \u00e7ok b\u00fcy\u00fck bir ihtiya\u00e7t\u0131, ihtiyac\u0131 kar\u015f\u0131lad\u0131\u011f\u0131m\u0131z i\u00e7in \u00e7ok mutluyuz. Hatay art\u0131k belli bir seviyenin \u00fcst\u00fcne \u00e7\u0131km\u0131\u015f bir \u015fehir. Bundan sonra Hatay\u2019\u0131n her y\u00f6n\u00fc ile S\u00fcper Lig\u2019de yar\u0131\u015fmas\u0131 gerekiyor. Daha ataca\u011f\u0131m\u0131z \u00e7ok ad\u0131m ve gidece\u011fimiz \u00e7ok yol var. Hatay halk\u0131 ile birlikte h\u0131zl\u0131 bir \u015fekilde yukar\u0131ya t\u0131rmanmaya devam edece\u011fiz\u201d diye konu\u015ftu. <\/strong><\/p>\n\n\n\n\n\n

A\u00e7\u0131l\u0131\u015f\u0131n ard\u0131ndan L\u00fctf\u00fc Sava\u015f ve e\u015fi Prof. Dr. Nazan Sava\u015f, Akademi mutfa\u011f\u0131na ge\u00e7erek akademinin ilk \u00f6\u011frencileri oldu. Sava\u015f \u00e7ifti, balkabakl\u0131 ve ke\u00e7i peynirli muska b\u00f6re\u011fi yapt\u0131ktan sonra, \u00fcr\u00fcnler haz\u0131rlanan iftara kat\u0131lanlar taraf\u0131ndan be\u011feni ile t\u00fcketildi. <\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"
