T\u00fcrkiye\u2019de yemek tarih\u00e7ili\u011fi alan\u0131n\u0131n in\u015fas\u0131nda rol oynam\u0131\u015f isimler kadar, alandaki yeni \u00e7al\u0131\u015fmalara da yer ayr\u0131lacak olan bu konu\u015fma dizinde mutfa\u011f\u0131n tarihini k\u00fclt\u00fcrel, toplumsal, ekonomik ve \u00e7evresel ba\u011flar\u0131yla beraber; malzemelerden, tariflere, pi\u015firme tekniklerine, ara\u00e7 gere\u00e7lerine, sofran\u0131n d\u00fczenine, adab\u0131na uzanan bir alanda konu edinece\u011fiz.<\/p>\n

G\u00fcndelik hayat\u0131m\u0131z\u0131n en ba\u015fat meselelerinden biri olan yemek, tarih \u00e7al\u0131\u015fmalar\u0131nda da giderek daha merkezi bir konuma gelmi\u015f durumda. T\u0131pk\u0131 mutfaklar gibi kap\u0131lar\u0131, pencereleri bir\u00e7ok ba\u015fka sahaya a\u00e7\u0131lan; \u00e7ekmecelerinden, dolaplar\u0131ndan \u00e7\u0131kanlarla toplumsal, ekonomik, k\u00fclt\u00fcrel ve politik tarihi anlamam\u0131za, yeniden d\u00fc\u015f\u00fcnmemize imk\u00e2n veren; tarih\u00e7ilik harici disiplinlerle de kuvvetli ba\u011flara sahip tam anlam\u0131yla disiplinler aras\u0131 bir \u00e7al\u0131\u015fma sahas\u0131 yemek tarih\u00e7ili\u011fi. Osmanl\u0131 ve Cumhuriyet d\u00f6nemi T\u00fcrkiye tarih\u00e7ili\u011fi de genel olarak yemek tarih\u00e7ili\u011finde g\u00f6zlemlenen bu hareketlili\u011fi yak\u0131ndan takip ediyor. Son y\u0131llarda bu alanda giderek daha \u00e7ok yay\u0131n ve bilgi \u00fcretildi\u011fine, yeni yakla\u015f\u0131mlar ve sorularla alan\u0131n derinli\u011finin artmakta oldu\u011funa tan\u0131k oluyoruz. Bir yandan detaylara, tekilliklere y\u00f6nelik hassasiyetini koruyan di\u011fer yandan yeme\u011fin insan hayat\u0131ndaki merkezi konumuna denk d\u00fc\u015fer bir bi\u00e7imde onu ba\u015fka disiplinlerle ili\u015fki halinde ele alan \u00e7al\u0131\u015fmalar \u00e7o\u011fal\u0131yor.<\/p>\n

Dr. \u00d6zge Samanc\u0131 1995 y\u0131l\u0131nda Bo\u011fazi\u00e7i \u00dcniversitesi Tarih B\u00f6l\u00fcm\u00fc lisans program\u0131ndan, 1998 y\u0131l\u0131nda ayn\u0131 \u00fcniversitesinin Tarih Y\u00fcksek lisans program\u0131ndan mezun olmu\u015ftur. 2009\u2019da y\u0131l\u0131nda Ecole des Hautes Etudes en Sciences Sociales (EHESS-Paris)\u2019te tarih ve medeniyetler alan\u0131nda doktora derecesini alan Samanc\u0131, doktora tezini \u201c19.
